Beetroot Burfi / Barfi

There are lots of desserts that come into my favourite category but the most favourite among my favourites is Beetroot burfi. Its called burfi/barfi. Burfi is an Indian sweet dish recipe made from condensed milk which is very sweet. Why it became my favourite is because I started eating beetroot after eating this dish for the first time (As a kid I didn’t know it was beetroot when mom gave it to me).

So today I will share its recipe.

Ingredients :

1) Ghee - 5 table spoon
2) Cashew - 4 nos.
3) Badam - 4 nos.
4) Beetroot - 2 nos. shredded
5) Full cream milk - 300 ml ( Make sure to use full cream milk only)
6) Sugar - 3/4 cup
7) Cardamon powder - 1 table spoon sugar + 5to6 cardamon (grind in mixer)

Beetroot burfi is a sweet dish / dessert made from Beetroot, condensed milk, sugar, cashew, badam and cardamon. Its a special sweet dessert

Preparation method
  1. Add 2 tbsp of ghee to a pan. Melt it and add cashew and badam. Roast it. Keep it aside
  2. To the same pan add 3 more tbsp of ghee, melt it and then add 2 nos. shredded beetroot and saute in full flame for 3 mins.
  3. After 3 mins lower the flame and then add 300 ml full cream milk. Mix it well under high flame. Let it boil and then close the pan. Cook for 5 mins but stir a little every now and then.
  4. After 5 mins add 10–12 raisins and stir for 1 min. Then add 3/4 cup sugar.
  5. Keep on stirring till all liquid evaporates and the consistency becomes thick. When there is no visible liquid then stir in medium flame and then add roasted cashew and badam to the burfi or barfi.
  6. Grind 1 tbsp sugar and 5–6 cardamon to a fine powder in a mixer and then add it to the pan and mix well.
  7. Keep on stirring till it sticks together. Let it cool for 2 hours after transferring to a plate.
After the burfi cools down cut it in square blocks and eat to your hearts content….

It is tough to imagine Indian cuisine without cottage cheese or  paneer . If the non-vegetarians have their ever-so-versatile chicken, then vegetarians have for long taken pride in their most beloved  'paneer ' which can blend in any dry or gravy preparation. There are many health benefits in consuming paneer. I will list out a few.  It is rich in proteins and also strengthens bones and teeth.
