It is tough to imagine Indian cuisine without cottage cheese or paneer. If the non-vegetarians have their ever-so-versatile chicken, then vegetarians have for long taken pride in their most beloved 'paneer' which can blend in any dry or gravy preparation. There are many health benefits in consuming paneer. I will list out a few.
It is rich in proteins and also strengthens bones and teeth. Cottage cheese is packed with magnesium which helps in maintaining blood sugar levels. It also has phosphorous which along with magnesium aids in digestion along with preventing constipation. Paneer is also packed with linoleic acid (a fatty acid) which increases the fat burning process in your body.
That is enough on health benefits of Cottage cheese / Paneer. Now lets see how to make a very tasty dish with Paneer. Making Chilli Paneer at home is very easy. The dish is very delicious and can be eaten with roti and rice. There are mainly two steps in making this dish.
Step 1 ) Marinating & Deep Fry
Ingredients
- Cottage cheese / Paneer - 200 gm
- Corn flour - 2 tbsp
- Water - as needed
- Red Chilly Powder - 1 tsp
- Kashmiri red chilly powder 1/4 tsp
- Salt - to taste
Preparation Method
Cut the paneer into cubes. Add all the above ingredients and sprinkle some water. Mix well and marinate for atleast 20 minutes. Ater 20 minutes deep fry paneer. When it becomes golden brown take it out and keep aside.
Step 2 : Gravy Preparation
Ingredients
- Roughly chopped onion - 1/2 cup
- Roughly chopped tomato - 1 nos
- Roughly chopped capsicum - 1/2 cup
- Vinegar - 1/2 tsp
- Corn flour slurry - 1/2 tbsp corn flour + 2 tbsp water and make corn flour slurry
- Garlic - 8 cloves finely chopped
- Ginger - 1 inch finely chopped
- Soya sauce - 1 tbsp
- Red chilly sauce - 2 tbsp
- Tomato sauce - 2 tbsp
- Green chilly - 2 nos finely chopped
- Pepper powder - 1/8 tsp
- Salt - to taste
- Water - 1 cup
- Oil - 2 to 3 tbsp
First take a pan then add 2 to 3 table spoon oil to it and then heat the pan. After the oil heats up add garlic, ginger, green chilly and sauté well for 1 minute. After 1 minute add onion to the pan. Mix well and then add capsicum & tomato. Mix well and sauté for 3 to 4 min in high flame so that it is cooked well. Then add red chilly sauce, soya sauce and 1 tbsp tomato sauce and sauté for 1 min. Keep the other 1 tbsp tomato sauce aside to be put after 1 minute. Then add vinegar, water and 1 tbsp tomato sauce. ( We are doing this so that red colour of the dish is preserved without adding any extra colours). Now let it boil.
As the mixture starts boiling add salt and pepper powder. Mix well and then add corn flour slurry that we have prepared before hand. Mix well and the add the paneer that we have fried. Mix well and now your delicious Chilli Paneer dish is ready to eat. Eat with roti and rice you will cherish the taste. You can always watch this video to clarify any doubts.
