Vada Pav | how to make vada pav | wada pav | batata vada pav | Mumbai style vada pav

 

There are 3 main ingredients to a Complete Vada Pav. One is Vada which includes both stuffing and its batter. The next one is a Pav / bread. You can either buy it or make at home. The last one is Red chutney which completes the dish. It is spicy flavoured and can be made easily in just 5 minutes. With all these ingredients you can eat an authentic Mumbai style Vada Pav, Mumbai’s favourite dish.

Ingredients for Vada’s Stuffing

Potato - 2 nos. Big sized

Onion - 1 medium sized finely chopped

Garlic - 7 to 8 cloves

Ginger - 1/2 inch

Curry leaves - to taste

Green chilly - 5 to 6

salt - to taste

Chilly power - 1/2 tsp

Chat masala - 1/4 tsp

Asafoetida / Hing - 1/4 tsp

Cumin seeds - 1/4 tsp

Turmeric powder - 1/4 tsp

Ingredients for Vada Batter

Gram flour - 1 cup

Salt - to taste

Turmeric powder - 1/4 tsp

Chilly powder - 1 tsp

Baking soda - 1/8 tsp

Water - A little for medium thick conistency

Red Chutney Ingredients

Garlic - 6 to 7 cloves

Chilly powder - 1 tbsp

Turmeric powder - 1/4 tsp

Salt - to taste

Preparation Method

To prepare Vada stuffing first boil the potato in a bowl and smash it. Smash it pretty well so that it doesn’t feel bad when you eat. Then grind ginger, garlic, green chilly and curry leaves in a mixer to paste. While grinding add a little water to get a paste consistency.

Then heat 2–3 tbsp oil in a pan and add cumin seeds. Let it crackle. After that add asafoetida/ hing then mix well. Now add onion to the pan and sauté till it is light brown. Sprinkle a little salt on onion so that it cooks faster. After Onion turns light brown add grinded paste to the pan. Now sauté till rawness of the paste is gone.

Now add turmeric powder, chat masala and chilly powder. Sauté till the raw smell of masalas are gone and then add smashed potatoes. Mix well till all the masalas gets absorbed by potatoes. Now let it cool.

After it cools to room temperature make small round balls. The size of the ball should be as such that it fits into the Pav you have. Now we can start Vada batter preparation

To prepare vada batter put all Vada Batter ingredients in a bowl and mix well till it becomes medium thick consistency. Now dip the stuffing balls made and coat it well with batter. Deep fry the balls till it turns golden brown. Take out when it becomes golden brown and keep it aside.

To prepare red chutney add the remaining batter to oil and let it fry. You have to sprinkle the batter on oil. Take it out when it turns light brown. Now add the fried batter and all other ingredients in a mixer and grind to powder form. Your red spicy chutney is ready.

Now take a bun /Pav and spread the red chutney first. Next place the prepared Vada inside. The authentic Vada Pav in Mumbai street style is ready. Now you can eat it to your hearts content.
