This is my second YouTube video blog. As I said in the first video there were many factors as to why I started my channel now. First and foremost reason for it may have been a video taken by my daughter and the inspiration each member of my family received after watching it. Due to lock down she became an avid watcher of YouTube and started to imitate some of them. What she said in that video I will divulge in my next blog.
So now lets see what dish I am presenting today. It is a very delicious North Indian style chicken curry. It is one of my favourite dishes and I came to learn its recipe from my friend. There are some secrets to the taste which will be revealed in due course. Now let's see how the dish is prepared.
Step 1) Chicken Marination
Marination of chicken is one of the most important steps that we have to undertake while preparing chicken dishes. Only then will the chicken absorb all the flavours.
The ingredients for marination are :
a) Chicken - 500 gm
b) Garlic - 8 cloves
c) Green chilly - 2 nos.
d) Ginger - 1 small piece ( size in video)
e) Coriander leaves - to taste
f) Turmeric powder - 1/4 tablespoon.
g) Chilly powder - 1/2 tablespoon.
h) Salt - to taste
First of all grind garlic + ginger + green chilly + coriander leaves to a fine paste in mixer.( ginger garlic paste has to be made for curry also, you can see the quantity below).You have to add little water while grinding to get the paste in a proper manner.
Next take the chicken in a bowl and add turmeric powder ,chilly powder, salt and grinded paste to it. Then rub the ingredients all over the chicken evenly. Then afterwards keep the chicken either overnight for marinating or at least 1 hour before in fridge before using it further.
Step 2) Chicken Curry preparation
The ingredients for curry are :
a) Onion- 2 nos. medium size
b) Garlic - 1 nos.
c) Coriander leaves- 1 cup/ to taste
d) Ginger - 1 inch long
e) Green chilly - 5 to 6 nos.
f) Tomato - 2 nos.
g) Curd - 2 1/2 table spoon.
h) Chilly powder- 2 table spoon
i) Coriander powder - 4 table spoon
j) Turmeric powder - 1/4 table spoon
k) Garam masala - 1 1/2 table spoon
l) Salt - to taste
m) Pepper - 8 to 10 pieces
n) Cumin seeds - 3/4 teaspoon
O) Cloves - 3 pieces
p) Aniseed - 1 teaspoon
q) Bay leaf - 2 nos.
r) Cinnamon - 2 nos.
s) Cardamom - 2 nos.
First you have to finely chop onion and tomato( for size reference you can watch the video) and make ginger garlic paste as mentioned above. Then add 4 to 5 tablespoon oil to pan. After oil gets warm mildly then add all spices (m to s) to the oil. Let it crackle i.e. you can hear crackle sound.
Then add onion to the pan and sauté it for 6 to 7 mins till it becomes light brown. This is an important step and do not add salt to reduce time. After the onion becomes light brown add ginger garlic paste. Then sauté for almost 10 mins. You will smell a pleasant aromatic smell this time around. It's the paste getting cooked. You can add little water and sauté if you feel it's sticking to pan but do not add a lot of water.
Then add masalas (h to j) and sauté for 5 mins. You may think that we are doing sauté for a long time and it seems boring but that is not the case. One of the secrets to this recipe is consistent sauté. You have to be patient and do it properly.
After 5 mins add tomato and mix it. Then add 1 tablespoon garam masala and keep 1/2 tablespoon of it aside ( another secret to this recipe). After mixing close the pan with lid for 3 mins. Tomato will be cooked. Always sauté onion tomato in medium flame only.
Next add curd and mix well. The add salt to it. As you are adding curd don't add salt in the beginning. Then add chicken. Then close the lid and let chicken cook. By doing this water will come out of chicken.
Add water if you require the curry to be more liquid and cook chicken till it's cooked. After chicken is cooked and gas is off add that 1/2 tablespoon of garam masala to it (this is a secret to this recipes taste).
This is how you prepare chicken curry in North Indian style. It may seem cumbersome but it is worth making. The deliciousness of the curry will let you forget all the work you had to do to make it.
