Welcome this is my fifth blog (excluding my Share my thoughts). In this blog I will pick up from where I left last. I have already explained one of the reasons for starting the blog. So today lets see the second reason. It may be ironic to say it was "CORONA". Because of covid everyone was shut inside their homes and so was I. Day after day sitting at home without venturing into the outside world was taking a toll in all our lives..
At this time YouTube was a way out to keep ourselves busy. Being busy will rid of you boredom and even sadness ( I can vouch). So you can say the pandemic that plunged the world into chaos brought upon a positive change in my life that resulted in me exploring new ways to express myself.
Alright now let's dive into today's recipe. It's a vegetarian dish that is usually made in our homes. I remember eating this dish made by mother in my childhood days. So you can guess it's a passed down recipe. But there is a twist to this recipe and that is onion chutney. Mom adds onion chutney as one of the ingredients in making this traditional dish and that is unheard of.. ( rebellious )
The ingredients to make onion chutney are :
1) Onion - a half onion
2) Chilly powder - 1/4 teaspoon
3) Salt - to taste
To make chutney grind these ingredients raw in a mixer . You can add a little water while grinding but make sure to attain the consistency shown in the video. After grinding keep it aside.
The ingredients to make thoran are :
1) Chopped Beans - 250 gm
2) Chopped onion - 1 and half nos.
3) Chopped garlic - 4 to 5 cloves
4) Urad dal - 1/4 teaspoon (optional ingredient )
5) Green chilly - 3 to 4 nos.
6) Curry leaves - to taste
7) Cumin seeds - 1/2 teaspoon
8) Turmeric pwdr. - 1/4 teaspoon
9) Salt - to taste
10 ) Red chilly - 3 to 4 nos.
11 ) Onion chutney
To make the dish first take 3 to 4 tablespoon of oil in a pan and heat it. Then add cumin seeds and urad dal and let it crackle. (Urad dal is an optional ingredient in this recipe. I add it because I really love the taste of dal with thoran) After you hear the crackling sound add red chillies to it, then mix and add curry leaves to the pan. Then mix well till all the ingredients are cooked.
When all added ingredients get cooked then add the chopped onion ( for size refer my video ). Cook until onion turns light brown in colour in medium flame. Then add green chilly and garlic. Saute well and add chopped beans along with turmeric powder & salt. Salt should be added to your own taste because everyone likes it differently.
Saute well and then add one quarter cup water to the cauldron (kadai). Close the vessel and cook for 7 to 8 minutes in medium flame, but saute now and then so that vegetables do not burn. After 8 minutes you will see the water evaporated and the beans can be easily crushed(i.e. cooked). Then add 1 table spoon of the secret ingredient, i.e. onion chutney. Mix well and cover the pan for 2 to 3 seconds so that the flavour is equally distributed.
" Voila" your tasty beans thoran dish is ready. You can eat it with rice or bread and if you like to eat fried you can saute for an additional 2 to 3 minutes. Anyways it is very tasty and I have eaten this from my childhood and I guarantee its deliciousness.
